Another Variation on Tikki Masala

This one, I kind of invented as I was making it. I knew the basic ingredients, but I didn’t know how much I was going to use or how it would turn out. I’m happy to report that, despite making an emergency store run for tomato paste halfway through, it was a success!

Note that I made my own garam masala because it is SO MUCH CHEAPER that way-here’s a site with a recipe.

This recipe is so easy and, other than cooking the beans, takes virtually no time! And, it’s delicious!

 

1 c uncooked garbanzo beans

1 can tomato paste

2 T garam masala

1 tsp ginger

1 onion

4 handfuls spinach

1 T olive oil

 

  1. Cook the beans.
  2. Chop the spinach and onion.
  3. Sautee the spinach and onion in olive oil over medium heat for about 5 minutes, or until the spinach is wilted.
  4. Mix in the tomato paste and spices. Cook an additional 3 minutes.
  5. Mix in the garbanzo beans (I had to separate mine into two different batches because my pan wasn’t big enough). Cook approximately 3 more minutes, or until the beans start to turn brown.
  6. All done!
